In the summer, I hardly ever want to cook because it’s so effing hot! The good thing about this recipe is even though it requires you to cook for a minute, it takes under 5 minutes to make this recipe. Can’t beat that, right?! Fajitas are one of my go to favorites, but this is a¬†lighter, cooler, healthier version.

5 minute chicken fajita salad

Ingredients

1 chicken breast

olive oil

1 teaspoon cumin

1 teaspoon chili powder

salt to taste

6-8 sweet mini peppers, sliced

Tropical Green Smoothie

Happy weekend, everyone! I am absolutely LOVING the sunshine here and all this beautiful summer weather has me craving smoothies so bad. That’s a good thing, yes? This time of year I basically never want to cook because of the heat and something cold and healthy is always a good answer. My son was asking me to make him a smoothie and since I’m too lazy to do much else, we whipped this up together. After all, he pretty much always insists on helping me these days. I’ll admit, it kind of makes me wish I was drinking it at the beach instead of in this desert, but I’ll take it.

Tropical Green Smoothie Recipe

Ingredients

1 1/2 cups spinach
1/3 cup Greek yogurt
1/2 banana
1/2 cup pineapple chunks
1 tablespoon coconut coffee creamer (this may sound crazy, but it’s delicious in smoothies)
water
chia seeds (optional)

Directions

If you have a Magic Bullet, use the big cup. Add in all ingredients and blend your tropical deliciousness. Add chia seeds. Come to mama.

Working Out is Working On Yourself

One thing I really wanted to make as a goal this year is getting back into yoga. I have done it regularly on and off over the last few years, and especially doing it toward the end of my pregnancy was amazing! So having nearly a year as a new mom without time to do yoga, I was ready to jump back in. I’ve been doing a series on Hulu Plus called “Yoga with a View” that I love. It’s under 25 minutes, is a great combo of a decent physical workout and meditation, and I can do it at my convenience in my living room.

I am sort of picky with my yoga. I don’t like it to be too “fitness class” yoga, which if you’ve been to a class at most fitness centers, you know what I mean. It’s one of the few I’ve done that I think really accomplish centering me without being too cheesy. Anyway, 2014 needs meditation and centering, so I’ve been working on working on myself. :)

Welcome 2014!

Alright, time to start fresh. It’s the new year! Last year I didn’t make too many resolutions seeing as I was 8 months pregnant and wasn’t too sure what I was getting into. So I didn’t really make any particular goals other than to fully enjoy my time with my baby. I think I get a big check ??for that one! I have adored every moment I get to spend with my little guy and I love the joy he spreads to my family and friends as well. He truly is a blessing!

Anyway so one thing I love is having a date night to write out resolutions before the new year comes. Then we can set goals individually and as a couple so we can support each other. We had one such date planned, but then me and baby Z came down with a nasty cold (that we still have today, boo!) so we haven’t totally finished.

But one thing I know I want to add to my list is more blogging! A lot of life has gotten in the way of that, so I’m setting what I think is an entirely realistic goal of at least once a week. Hopefully more, but weekly bare minimum.

I will share more when I have them, bit in the meantime, happy new year!
