Batch Baby Food Recipe with Acorn Squash

I mostly have done baby led weaning with my little one, but having baby food on hand is always helpful when I’m on the run or need a quick meal to drop off with Grandma to babysit. I particularly like it when I’m at a restaurant since letting him feed himself is messy. And I love making my own food not only because it’s healthy and I know it’s not laden with additives and preservatives, but also it’s so much cheaper! I had an acorn squash sitting on my counter, so I cooked it up and whipped up these four batches which i just freeze in a tray and pop in the freezer. What I love most is they all have such different flavors and they are tasty enough that I was happily testing them all and would gladly eat them. My baby deserves delicious food! So try these out. I made all four in an episode of Signing Time, so it’s certainly doable.

Here’s your shopping list:

  • Acorn squash
  • Apple (I used Fuji but whatever’s your fave)
  • Tomato
  • Small bag of baby carrots
  • Bag of spinach (you won’t use it all, so have a green smoothie for yourself!)
  • 8 ounces cooked chicken breast (I used leftover rotisserie)
  • Greek or whole fat yogurt
  • 1/2 cup oatmeal
  • Small package of dried figs or raisins
  • 1/4 cup pecans
  • Spices


Spinach Carrot Squash and Chicken Baby Food

Ingredients

1/4 of an acorn squash
1 cup spinach
1/2 cup carrots
1/2 cup chicken
1 teaspoon Herbs du Provence (or sub with rosemary and thyme)
1 cup water, breastmilk, or formula


Apple Pecan Carrot and Squash Baby Food

Ingredients

1/4 of an acorn squash
1/2 cup carrots
1/2 an apple
1/4 cup pecans, chopped
1/2 teaspoon cinnamon
Pinch of nutmeg
1 cup water, breastmilk, or formula


Carrot Chicken Tomato and Squash Baby Food

Ingredients

1/4 of an acorn squash
1/2 a tomato
1 cup carrots
1/2 cup chicken
1 teaspoon cumin
1/2 teaspoon paprika
1 cup water, breastmilk, or formula


Apple Oatmeal Yogurt and Squash Baby Food

Ingredients

1/4 of an acorn squash, cooked
1/2 an apple, cooked
1/2 cup Greek or whole fat yogurt
1/2 cup oatmeal
1/4 cup dried figs or raisins (cook with oatmeal)
1/2 teaspoon cinnamon
1 cup water, breastmilk, or formula


Directions

To start, cook the squash, carrots, apple and oatmeal with figs/raisins. You can bake in the oven, boil, microwave — whichever is your preferred method. I prefer to microwave because it’s fast and easy, but that’s just me. Then for each batch, add all ingredients to a blender or food processor and blend until smooth, adding liquid gradually (and adding more if needed to purée. Then pour into freezer cubes and store in freezer.

My Little Baby Pumpkin

I got this big pumpkin at our pumpkin themed baby shower and I just couldn’t resist hollowing it out to put Mr. Z in it. i scraped out, cut holes, and then I lined it with a blanket so he was cozy rather than sitting in the slimy pumpkin in a diaper. He was actually totally willing to just chill there amazingly! It’s like a pumpkin bumbo. Haha! He was so cute on the porch as my little jack-o-lantern!

My dear friend, Megan, is having a baby any day now, and I keep meaning to share the adorableness of her baby shower. Best Friends Since Birth

Remember a few months ago when I told the story of me and my best friend and how we made our childhood dreams playing M.A.S.H. come true? Okay, minus the mansions next door. Still working on that.

Besties and babies

You can read the whole story here, but to sum it up, we got engaged to our long time boyfriends a week an a half apart, about 10 months later got married 4 weeks apart, and 3 1/2 years later were due with baby boys 8 weeks apart. Oh and our hubbies are good friends and we work together. To say we live parallel lives is an understatement.

Well since then I welcomed my little Zachary into the world and exactly 9 weeks later she welcomed her William, or Liam, into the world. Now get this — not only were they born in the same hospital, but as fate would have it they were born in the same room of the hospital. You can’t make that stuff up! Pretty trippy. Obviously they are destined to be best friends just like their mommies and daddies.

My 40 Weeks of Pregnancy Baby Bump

I’m constantly taking photos of my life normally, so when I got pregnant I knew I wanted to find a fun way to document my growing baby bump. Plus, let’s face it, I do social media for a living. Anyways the pressure was on (from myself) to come up with a cute pregnancy photo idea. So at 8 weeks I whipped out a striped shirt I had bought a few weeks before I knew I was expecting figuring it would show my shape well as it changed. At the time it seemed stretchy enough to fit a growing belly. Uhhh, 30 weeks later and even one shirt size up I was kind of kicking myself as it barely covered my bump. Haha! Anyway, here’s my pregnancy up almost 40 weeks since I delivered one day early (it’s a good story — read my birth story here). The whole experience was certainly was an adventure!
