Apple blueberry spinach smoothie

I love making smoothies for me and the little guy to share, and since I routinely keep all these ingredients on hand, this is a favorite we both love.


1 cup spinach
1/2 an apple
1/3 cup frozen blueberries
1/2 cup vanilla (or plain) Greek yogurt
1/2 cup almond milk


Add all into blender and blend until smooth.

Working Out is Working On Yourself

One thing I really wanted to make as a goal this year is getting back into yoga. I have done it regularly on and off over the last few years, and especially doing it toward the end of my pregnancy was amazing! So having nearly a year as a new mom without time to do yoga, I was ready to jump back in. I’ve been doing a series on Hulu Plus called “Yoga with a View” that I love. It’s under 25 minutes, is a great combo of a decent physical workout and meditation, and I can do it at my convenience in my living room.

I am sort of picky with my yoga. I don’t like it to be too “fitness class” yoga, which if you’ve been to a class at most fitness centers, you know what I mean. It’s one of the few I’ve done that I think really accomplish centering me without being too cheesy. Anyway, 2014 needs meditation and centering, so I’ve been working on working on myself. :)

Easy Apple Banana Green Smoothie

I’m all about easy when it comes to eating healthy and it doesn’t get much easier than this. I spent all of today out running errands with the babe, so by the time I got home and ready to put away groceries, I was famished. But then somehow I got caught up deep cleaning my fridge since for once it was nearly completely empty and I just dropped $200 at the store. Soooo an hour later I put away groceries and then whipped this up really fast to curb my hunger while I made something else for lunch. This is perfect because they are such staples that you usually have at home (or at least I do!) so it’s a go to recipe for me. And 30 seconds later I was a much happier mama, and even Zach liked it!


1/2 a banana
1/2 an apple
1/4 cup Greek yogurt
1 cup spinach
1/2 cup fruit juice (I used apple)
1/4 cup ice


Blend and enjoy!

Oatmeal Cookie Green Smoothie

I’m on day 13 straight of green smoothies in the new year, so I’m trying to change it up and experiment with ingredients. Since I just made some baby food recipes this weekend, one of the recipes tasted so good together it was almost like oatmeal cookie dough! So I changed it around to make it in green smoothie form. Yum!


1/3 cup Greek yogurt
1/3 cup oatmeal
1 tablespoon chopped nuts
1 tablespoon flax seed
1/2 an apple
2-3 tablespoons dried figs or raisins
1/2 cup almond milk
1-2 cups spinach


If you’re making in a Magic Bullet, I’d use one of the bigger cups. Add all ingredients and blend until smooth.

Roasted Balsamic Brussels Sprouts with Tomatoes and Feta

I’m always looking for healthy recipes, but with a baby it’s hard to find really delicious recipes that are easy. What I love about these Brussels sprouts is they taste so gourmet and delicious with little effort. Only only slightly challenging part was making sure the little mister was entertained for 5 minutes while I constantly whisked the balsamic reduction, but he was fine (read: I had to let him cry it out for a minute since he was bored…)


1 pound Brussels sprouts
1/2 pound grape tomatoes
1/2 a red onion
2-3 tablespoons olive oil
Salt and pepper to taste
Feta cheese

Balsamic reduction:
1/2 cup balsamic vinegar
2 teaspoons sugar


Preheat oven to 400 degrees. Cut off brown ends of sprouts, slice in half and lay face down on baking sheet. Dice onions and sprinkle on baking sheet. Place in oven for 20 minutes. After 10 minutes of baking, add grape tomatoes and bake the remaining 10 minutes. When done, scoop into a bowl, sprinkle with feta, and drizzle with balsamic reduction.

For balsamic reduction: pour balsamic vinegar and sugar into a small pan and whisk on high until thick and syrupy, about 5 minutes.

Vegan Whole Grain Banana Muffins

This morning I came downstairs hungry and realized we had three ripe bananas that were begging to be made into something. Now normally I have a system for my bananas — if I have 2 ripe bananas I make pancakes, 3 I make bread and 4 I make my usual banana muffin recipe. But when I peeked in the fridge I realized we had no milk, no eggs and no butter. What’s a girl to do? So I experimented a bit and made these vegan banana muffins since we were out of everything! And my, are the moist and delish for being pretty healthy too. Whole grains + sunflower seeds, pecans, and flax seeds give them rich flavor…plus I added some chocolate chips, just for good measure. ;)


3 ripe bananas
1 teaspoon vanilla
1/2 cup maple syrup
1/3 cup canola oil
1/3 cup coconut or almond milk
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
3 tablespoons sugar
1 teaspoon baking soda
1 cup whole wheat flour
1 cup oatmeal
1/2 cup nuts or seeds (I used sunflower seeds, flax seeds, and pecans)


Pre-heat oven to 375 degrees. Mix together wet ingredients. I like to mash the bananas right in my Kitchenaid mixer before adding all the rest. Then add the remaining dry ingredients, followed by the nuts and seeds. Scoop into greased muffin pan and sprinkle a few nuts on top. Bake for 18-20 minutes. Makes 12-16 muffins.
